Cooking Light and came across the recipe for Waldorf Salad with Steel Cut Oats. The oats add a different texture and offer a healthy variation to one of my favorites as a kid. This would make a great appetizer, light meal or accompaniment at brunch. This dish is by Mark Bittman, but Waldorf salad was originated back in the late 1800’s at the Waldorf Hotel in New York City.
