I’m doing weight watchers (have you seen Jennifer Hudson?), and their recipes are really great. This creamy sweet potato dip is a quick snack and simple to make.
1 1/2 cups canned chickpeas, loose skins removed, washed, drained
1 cup cooked sweet potato, mashed*
1/4 cup packed light brown sugar
1/2 cup fresh orange juice
1 tsp orange zest, finely minced
1 tsp ginger root, fresh, finely minced
Combine all ingredients in a food processor or blender; blend until smooth. Allow to set up in refrigerator for about 30 minutes. Yields about 2 tablespoons plus 2 teaspoons per serving.
*If you roast the sweet potato, you’ll bring out its natural sweetness. But you can steam, boil, or microwave the potato before you mash it, if you prefer.
